Summertime Granitas

Tis the season for summertime treats! But ice cream can often be too heavy and eating dessert out can be expensive. So I’ve tweaked some granita recipes to perfection (at least in my opinion) for when temperatures soar! While some of the combinations may seem a bit peculiar at first, trust me, they blend together quite well. A granita is comparable to a water ice and it originated in Sicily, Italy. It is the perfect summertime treat to cool you off.

So without further ado…

Watermelon Basil Granita
Prep: 10 minutes
Other: 8 hours, 10 minutes

Ingredients
1/2 cup sugar
1/2 cup warm water
3 cups sliced Watermelon
1 teaspoon Key Lime Juice
(I use Nellie & Joe’s Famous Key West Lime Juice)
2 large basil leaves (chopped)

Directions
1. Place sugar and water in a blender and process
until sugar dissolves. Add sliced watermelon, basil
and lime juice and process until smooth. Pour juice
mixture into an 8-inch square baking dish. Cover and
freeze 3 hours; stir well. Cover and freeze 5 hours
or overnight.

2. Remove mixture from freezer; let stand 10 minutes.
Scrape entire mixture with a fork until fluffy.

Strawberry Mango Cilantro Granita
Prep: 10 minutes
Other: 8 hours, 10 minutes

Ingredients
1/2 cup sugar
1/2 cup warm water
2 cups sliced strawberries
1 cup sliced mango
1 teaspoon Key Lime Juice
(I use Nellie & Joe’s Famous Key West Lime Juice)
2 tablespoons chopped Cilantro

Directions
1. Place sugar and water in a blender and process
until sugar dissolves. Add sliced strawberries, mango,
cilantro and lime juice and process until smooth. Pour
juice mixture into an 8-inch square baking dish. Cover
and freeze 3 hours; stir well. Cover and freeze 5 hours
or overnight.
